Ingredients
  

  • 1 cup edamame (shelled)
  • ½ teaspoon lemon zest (plus extra for garnish)
  • 3 tablespoon lemon juice
  • 6 tablespoon olive oil
  • 1 clove garlic
  • ½ teaspoon kosher salt (or to taste)
  • ¼ teaspoon pepper (ground)

Instructions
 

  • Add all ingredients to the bowl of a food processor. Process until ingredients are incorporated, but leave the spread a bit chunky. Garnish with additional lemon zest if desired.
