Heat oven to 350°F and line baking sheets with parchment paper.
In a large heatproof bowl, melt the butter. Add in 1 cup of granulated sugar and all of the brown sugar and vanilla extract and mix well. Beat in eggs until well incorporated.
Zest the orange over the bowl and add ½ teaspoon of cardamom. Mix well.
Add the flour and baking soda to the bowl and mix well.
In a small bowl, combine ½ cup granulated sugar and 1 teaspoon of ground cardamom.
Scoop generous tablespoonfuls of dough and roll into a ball. Coat the ball in the cardamom-sugar mixture and place on parchment-lined baking sheets about 2-3 inches apart.
Bake for 9-11 minutes, or until the bottom of the cookie is just starting to develop color.
Allow cookies to sit on the baking sheets for an additional 2 minutes before removing to a wire rack to cool completely.
Store in an airtight container. Cookies will soften with storage.
