In a medium skillet over medium heat, cook the chopped bacon until it is crisp. During the last 2-3 minutes of cooking, add the chopped dates and stir, warming them through.
Drain the cooked bacon and dates on a clean kitchen towel or paper bag. Set the bacon mixture aside.
In a medium bowl using a hand mixer, whip the goat cheese and cream cheese together until well blended and light in texture.
Fold the pepper and half of the crisped bacon and dates into the cheese mixture. Spread the dip evenly in a pie dish
Sprinkle the remaining dates and bacon over the top of the dip evenly.
Bake for 15 minutes, until the dip is lightly golden around the edges and heated through.
Remove from the oven and garnish with chopped parsley. Serve with crostini, crackers, or bread.
