Baked Goat Cheese Dip with Bacon and Dates

This baked goat cheese dip has a whipped cheese base studded with crisp, smoky bacon and soft, sweet dates for an extra delicious appetizer.

Ingredients
  

  • ½ pound bacon (chopped)
  • 6 oz medjool dates (pitted, about 14 dates)
  • 5 oz goat cheese (softened at room temp)
  • 8 oz cream cheese (softened at room temp)
  • ¼ teaspoon black pepper (ground)
  • 2 tablespoon parsley (chopped)
  • crostini, crackers, or bread (for serving)

Instructions
 

  • Preheat the oven to 375°F.
  • Chop the dates and bacon into ½-inch pieces.
  • In a medium skillet over medium heat, cook the chopped bacon until it is crisp. During the last 2-3 minutes of cooking, add the chopped dates and stir, warming them through.
  • Drain the cooked bacon and dates on a clean kitchen towel or paper bag. Set the bacon mixture aside.
  • In a medium bowl using a hand mixer, whip the goat cheese and cream cheese together until well blended and light in texture.
  • Fold the pepper and half of the crisped bacon and dates into the cheese mixture. Spread the dip evenly in a pie dish
  • Sprinkle the remaining dates and bacon over the top of the dip evenly.
  • Bake for 15 minutes, until the dip is lightly golden around the edges and heated through.
  • Remove from the oven and garnish with chopped parsley. Serve with crostini, crackers, or bread.
