2cupschicken stock(substitute vegetable stock or water)

Instructions
Cook the Vegetables
Dice the carrots, celery and onion. Mince the garlic.
Shred the cheddar on the large holes of a box grater. Chop the broccoli into small pieces. If you are using frozen broccoli, thaw it in the microwave, drain it of excess moisture, and chop it into small pieces,
In a Dutch oven or large soup pot, melt 1 tablespoon of butter over medium-high heat. Sauté the carrots, celery, onion, garlic, salt, and pepper for 5 minutes until the vegetables start to soften.
Add the water or broth and bring the soup to a boil over high heat.
Reduce heat to medium-low and cover the soup to cook for about 3 minutes.
Stir in the broccoli, replace the lid, and cook 7 minutes longer.
Prepare teh Cheese Sauce
While the vegetables cook, prepare the sauce. In a separate medium saucepan, add the remaining 2 tbsp. butter and melt over medium heat,
Stir in the flour and cook, whisking for 1 minute.
Continuing to whisk, pour in the evaporated milk and cook until the mixture begins to boil and thicken.
Remove the sauce from the heat and stir in the cheese until they it is melted and the sauce is smooth.
Finish the Soup
Turn off the heat from the soup and add all of the cheese sauce. Stir to combine.
Adjust seasoning as needed with with salt and pepper.
