Dark Chocolate Hummus with Peanut Butter

Ingredients
  

  • 15 oz chickpeas (garbanzo beans or ceci beans, canned)
  • ¼ cup aquafaba (from the drained beans)
  • cup natural peanut butter
  • cup cocoa powder (Dutched cocoa)
  • cup maple syrup
  • ¼ teaspoon kosher salt
  • 2 tablespoon water (or as needed)
  • chocolate chips, chopped nuts, freeze dried fruit (optional garnishes)

Instructions
 

  • Drain the garbanzo beans well, reserving the liquid (aquafaba).
  • Peel the garbanzo beans by placing each one between thumb and forefinger and squeezing gently.
  • To the bowl of a food processor, add the aquafaba, peanut butter, cocoa powder, salt, and maple syrup. Blend until smooth, scraping down the sides.
  • Add the peeled garbanzo beans and 2 tablespoons of water. Process until smooth, stopping 1-2 times to scrape down the sides of the processor bowl. Add additional water if needed for the desired consistency.
  • Transfer the hummus to a bowl, top with optional garnishes, and serve.
