Equipment

  • 1 cooling rack that can sit inside a sheet pan
  • 1 sheet pan

Ingredients
  

  • 1 lime (zested, then juiced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 teaspoon chili powder
  • ½ teaspoon cumin (ground)
  • teaspoon kosher salt
  • 1 tablespoon olive oil
  • 24 oz chicken thighs (boneless and skinless)

Instructions
 

  • Zest your lime over a medium bowl. Juice the lime.
  • Combine the spices, salt, juice and zest of the lime, and olive oil in the medium bowl.
  • Coat the chicken thighs well with the spice paste and allow them to marinate for 30 minutes in the refrigerator.
  • Line a sheet pan with foil and place a cooling rack over the top. Adjust the oven shelves so that the rack is about 6 inches from the heating element or gas flame.
  • Preheat the broiler for 5 minutes.
  • Lay the marinated chicken in a single layer over the cooling rack. Broil for 4-5 minutes per side.
  • Allow the chicken to rest for 5 minutes, then transfer it to a cutting board.
  • Slice or cube the chicken and serve while hot.
