Ingredients
6frozen burritos
15oz.green enchilada sauce
⅓cupsour cream
3oz.sharp cheddar cheese(shredded)
2cupsiceberg lettuce(shredded)
1cuptomato(diced)
¼cupcilantro(chopped)
Instructions
Preheat the oven to 400°F and grease a casserole dish with cooking spray.
Pour 10 ounces of green enchilada sauce in the bottom of the casserole dish.
Arrange the burritos over the enchilada sauce.
Combine 5 ounces of enchilada sauce with the sour cream and whisk until combined. Pour over the burritos.
Top the burritos with the shredded cheddar and cover the casserole with a sheet of foil.
Bake the casserole, covered, for 45 minutes. Remove the foil and bake an additional 15 minutes, or until golden and bubbly.
Cool the casserole for 5 minutes. Top with the shredded lettuce, tomatoes, and cilantro. Serve.
