Melon Salad with Mint and Lime is refreshing summer side with cantaloupe or honeydew and a mojito-inspired dressing of mint, lime, and honey.

Ingredients
  

  • 4 pounds cantaloupe (to yield 1.5-2 pounds of melon)
  • 20 leaves mint (plus extra for garnish)
  • 2 limes
  • teaspoon kosher salt
  • ¼ cup olive oil
  • 1 tablespoon honey

Instructions
 

  • Zest the limes to yield one teaspoon of lime zest. Juice the limes to yield two tablespoons of fresh juice.
  • Use an immersion blender or small food processor to blend the mint leaves, lime zest and juice, salt, olive oil, and honey into a smooth dressing. Set this aside.
  • Wash the melon, cut it in half and remove the seeds with a spoon. Use a melon baller to make 2-inch balls or cut away the peel and cut the melon into 2-inch cubes.
  • Toss melon balls and dressing in a large bowl until coated.
  • Transfer to a serving bowl and garnish with mint leaves. Serve immediately.
