Dukkah Recipe with Macadamia Nuts

Ingredients
  

  • 1 teaspoon lemon zest (from one whole lemon)
  • 1 cup macadamia nuts (150 grams)
  • 2 tablespoon cumin seeds (10 grams)
  • 2 ½ tablespoon coriander seeds (10 grams)
  • ¼ cup sesame seeds (25 grams)
  • 2 teaspoon kosher salt

Instructions
 

  • Preheat the oven to 200°F or use a "keep warm" setting. Zest the lemon and spread out the zest over a piece of parchment paper on a baking tray. Bake for about minutes, until the zest is completely dried.
  • While the zest is drying, heat a small sauté pan over medium-high heat. Toast the macadamia nuts until golden on some edges (about 3-4 minutes), then remove to a plate to cool.
  • Repeat the toasting step with the cumin seeds (about 1-2 minutes), coriander seeds (1-2 minutes), and sesame seeds (30 seconds to 1 minute), toasting each separately.
  • In the bowl of a food processor, pulse the macadamia nuts until the largest pieces are the size of pebbles. Remove to a medium bowl.
  • Next, process the coriander seeds with several pulses until they are cracked and broken down a bit. Add in the cumin seeds and dried zest and pulse about 5 more times. You still want crunchy bits of spices, but not too many whole seeds. Remove to the bowl with the nuts.
  • Add the sesame seeds and the salt to the bowl. Mix together until well blended.
  • Store the mixture in the freezer for up to one month.
