Ingredients

  • 3 cups chicken broth
  • 2 tablespoons salted butter
  • ¼ teaspoon kosher salt
  • teaspoon black pepper
  • 8 ounces fusilli pasta
  • 5.3 ounces Boursin cheese
  • fresh chives, parsley, thyme, or oregano (finely chopped, for garnish)

Instructions

  • Bring the broth, butter, salt, and pepper to a boil in a medium Dutch oven or 3-quart saucepan over high heat.
  • Add the pasta. Cook, stirring often, for 9-11 minutes. The pasta should be al dente, a couple minutes shy of completely tender.
  • Remove the pot from the heat and add the cheese, breaking it into pieces.
  • Cover the pasta and let the cheese melt, 3-4 minutes.
  • Stir the pasta to blend in the cheese. Add a splash of milk if needed to get the desired texture.
  • Serve, garnishing with finely chopped herbs.
