- Chicken Broth - Use a homemade, canned, or boxed chicken broth or stock in this recipe or use bouillon paste or cubes.
- Salted Butter - This recipe was developed using salted butter. If you only have unsalted butter on hand, add an extra pinch of salt to the stock or broth and taste for seasoning before serving.
- Fusilli Pasta - This is my favorite shape for boursin and pasta, with plenty of ridges to capture the creamy sauce and a short shape that cooks evenly in the chicken broth.
- Boursin Cheese - Boursin cheese is a cow's milk cheese that has a soft and creamy texture. There are a wide variety of flavors available depending on your supermarket. The flavor we most often use for this recipe is garlic and fine herbs, which is available at Costco for the best price in our area.
- Fresh Herbs - Finely chopped chives, parsley, basil, oregano, or thyme will add a finishing touch to your creamy pasta.
Instructions

Add the broth or stock, butter, salt, and pepper to a medium Dutch oven or 3-quart saucepan. Bring the broth to a boil over high heat.

Add the pasta and cook, stirring often, for 9-11 minutes. The pasta should be a couple minutes shy of completely tender.

When the pasta has absorbed almost all of the stock, remove it from the heat.

Crumble the Boursin cheese over the pasta and cover it with a lid. Allow the cheese to melt for 3-4 minutes.

Remove the lid and stir the pasta until the cheese is completely melted and creates a silky smooth cheese sauce that coats all of the pasta. Garnish with fresh chopped herbs, if desired, and serve immediately.
Top Tip
For the easiest melting, remove your cheese from the refrigerator and allow it to come up to room temperature while the stock is coming to a boil and the pasta cooks.
