    Greek Salad Dip

    Are you ready for the dip that will be the talk of the summer barbecue? Keep reading, because I have a real winner of a recipe for you today. This Greek Salad Dip is so simple to throw together but delivers big on flavor. All of the Greek salad components are there and you can get all of your favorite flavors on one chip for the ultimate bite!

    Ingredients and Preparation

    Gather up the classic combination of ingredients that make a Greek salad so popular: tomatoes, cucumber, olives, feta, red onion, lemon, and garbanzo beans. To prepare this Greek Salad Dip, all you need is a bowl, a cutting board, and a sharp knife and you are in business!

    The key to making every bite of this dip shine is to have the ingredients diced up finely so that you can get all of the flavors every time. Starting with the cucumbers, I first slice them into planks, then strips, and finally into small cubes. Seed the tomatoes and dice them as well. The red onion gets a very fine chop too (and I make myself an onion-free portion!). Finally, roughly chop up the olives and garbanzo beans.

    In the bottom of your medium bowl, whisk together the lemon juice, olive oil, salt, pepper, and oregano. Add in all of your diced veggies, beans, and the feta cheese and give the whole lot a stir. That's it! You are all set for the crunchy and fresh bites of your dip dreams!

    Serving Greek Salad Dip

    Obviously you can just snack to your heart's content with a big bag of pita chips and this Greek Salad Dip will disappear in no time. Consider adding a bit more olive oil and using the dip as a sauce for grilled chicken or steak, and then invite me over to dine with you! I think this dip would make a stellar lamb burger topping, but I bet you can think of even more yummy ways to use it.

    Ingredients
      

    Dressing

    • ¼ cup fresh lemon juice
    • ¼ cup olive oil
    • ¼ teaspoon kosher salt
    • ½ teaspoon dried oregano
    • black pepper (to taste)

    Dip

    • 10 kalamata olives (pitted and diced)
    • 2 plum tomatoes (seeded and diced)
    • 1 cup cucumber (finely diced)
    • ½ cup feta cheese (crumbled)
    • 2 cups garbanzo beans (diced)
    • ½ cup red onions (finely diced)
    • pita chips, store-bought or homemade (for serving)

    Instructions
     

    • In a medium bowl, whisk together the dressing ingredients.
    • Add the olives, feta, tomatoes, cucumber, and chickpeas to the bowl.
    • Toss the ingredients together with the dressing and serve with pita chips.
