- Cantaloupe - Use a cantaloupe that is just ripe with a fruity aroma, a golden color (no green under the webbing), and a smooth stem end. Avoid an over-ripe melon, it won't hold its shape when tossed with the mint and lime dressing.
- Mint - Fresh mint perks up the flavor in the dressing and accents the sweet melon well.
- Limes - Use enough fresh limes to get a teaspoon of lime zest and two tablespoons of fresh lime juice.
- Honey - Honey helps to emulsify the dressing and balances out the lime juice.
- Olive Oil - Choose a mildly flavored olive oil here, no need for a special extra virgin oil.
- Kosher Salt - Salt may seem like a strange addition to a melon salad, but it enhances every flavor we have going on in the dressing as well as the fresh fruit.
Instructions

Zest the limes to yield one teaspoon of zest. Cut the limes in half and juice them to yield two tablespoons of fresh juice.

Add the mint leaves, lime juice and zest, salt, olive oil, and honey to the bottom of a small blender cup of the pitcher of an immersion blender.

Blend the dressing well until it is emulsified and a lovely shade of green. Set this aside.

Wash the outside of the melon and cut it in half. Remove the seeds with a spoon. Use a melon baller to cut up the melon or slice the peel away and cut it into 1- to 2-inch cubes.

Add the melon to a large bowl and pour the mint and lime dressing over the top.

Toss the dressing and melon together and then transfer it to a serving dish. Garnish with extra mint, if desired and serve immediately.
Mint and Lime Dressing
This mojito-inspired mint and lime dressing is tart and fresh and walks that sweet and savory line. It is great as a dip for grilled shrimp or as a marinade for chicken skewers or thighs. For more savory applications, feel free to amp up the spice and add crushed red pepper flakes, hot sauce, or black pepper to the dressing.

- Vary the Melon - If cantaloupe isn't available where you are, honeydew or watermelon are great substitutes. You can also use a combination of all three for extra color and flavor variation.
- Add Cucumber - Cucumbers and melon are cousins, and they happen to make a great pairing. Add cucumber that has been diced in a size similar to your melon balls or pieces.
- Add Cheese - Crumbled feta cheese is a classic addition to a melon salad, but fresh mozzarella is also delicious. Choose the ciliegine (cherry) size or cut a larger ball of mozzarella into smaller pieces.

- Single-Serve Blender - A small blender is a great tool for sauces and marinades that might get lost in a larger blender pitcher. It's perfect for this mint and lime dressing and emulsifies the mixture into a smooth sauce.

Ingredients
- 4 pounds cantaloupe (to yield 1.5-2 pounds of melon)
- 20 leaves mint (plus extra for garnish)
- 2 limes
- ⅛ teaspoon kosher salt
- ¼ cup olive oil
- 1 tablespoon honey
Instructions

- Use an immersion blender or small food processor to blend the mint leaves, lime zest and juice, salt, olive oil, and honey into a smooth dressing. Set this aside.
- Wash the melon, cut it in half and remove the seeds with a spoon. Use a melon baller to make 2-inch balls or cut away the peel and cut the melon into 2-inch cubes.
- Toss melon balls and dressing in a large bowl until coated.
